The conservation work has also included the study of all the information present in the accompanying documents (receipts, business cards, notes, etc.) in order to realize an effective cataloguing. Various features are present in the diverse types of menus. The graphics (drawings, en- gravings, fonts used for titles, color images, etc.) play a significant role in the advertising/ communication references to the period of execution. The images present in the menus used by naval and aviation companies are also significant. This collection underlines a fundamental component of culinary art. It is constructed of all the cultural elements involved in the preparation of food, their traditions and their innovations. One cannot forget that the culinary culture has gone side by side with the history of humanity, evolution and societal change. Today, afteryears inwhichattentiontofinecuisinehasgivenway tostandardizedmethods by an industrialized society, it becomes essential to redefine the concept of this culture. It is, therefore, of great importance to give value to these ‘ancient menus’ that have marked tradition for centuries. Notebook VII - ANTIQUE MENUS - FOOD & CULTURE realized by the Study and Research Centre - Institutional Projects R.F.O. dedicates a careful selection of prestigious menus present in the private collection as a tribute to Lea Zanoni. Zanoni is joined by the Honourable Cristina Rossello (lawyer), Laura Pepe (professor of Ancient Greek Law), Giovanni Pirovano (banker) and Carlo Cracco (renowned chef) at the thoughtful Finance & Food encounter on the evening of December 4.
